    Do you have to heat up the sauce prior to bottling? Up to 145 deg F for 20 minutes or so to stop the fermentation process for long term shelf stability? Thanks! And great job on these videos!

      You don't have to in most cases. But to ensure the fermentation stops, and you are unsure whether it has, then I would suggest heating it to kill the lactobacillus.

    Hi Shaun! I got some seeds last year, but I didn't get round to doing anything with them. So last december I finally put them in some soil. The piri piri has given me loads of peppers already. It's very productive and healthy plant (although it does have tiny leaves and many pale and yellow leaves). My gf loves using them in all kinds of tasty chinese dishes. The sugar rush stripey and CC Jalapeno are also nicely productive. Unfortunately those peppers are still a bit too spicy for me to eat raw. I've been looking for a nice snack chilli pepper, but so far I haven't found one mild enough for me 😅 Unfortunately the others are not doing great. The Malawi Piquante (peppadew) has only grown somewhat small fruits so far (about 1-1.5cm diameter), the trinidad perfume only grew one small pepper so far (it's dropping most of the flowers) and the habanero only grew one tiny pepper, barely a few mm in size, and also dropping most of its flowers. There's lots of leafdrop, pale yellow leaves and curled leaves as well. What do you think could be wrong? I'm growing them inside under 3 LED grow lights which have workled great a couple of years before when I had many more plants. I ran out of perlite when transplanting them from a small plastic cup where they sprouted to a bigger pot. Do you think they could have a problem with the roots? I can't trace the problem to overwatering or underwatering. I don't think the problem is a lack of nutrients, because there are quite a few healthy leaves as well, mainly the jalapeno has many healthy green leaves. Could I just have been unlucky picking the wrong seed to grow a plant from? I still have several seeds left so I could try again with a new plant. Maybe I could provide a bigger pot, but I don't have a lot of space. They are now in a pot with a diameter of almost 17cm. A few years ago I had 3-4 cayenne plants that were very healthy and productive in the same pots as far as I can remember.

      My first thoughts are that you are overwatering. Especially with the lack of perlite not allowing good drainage. With regards to flower drop, make sure the humidity in the grow space is above 60%. A quick fix there is to spray/mist plain water in the morning and evening over the plants.

      @@ChilliChump Hmm thanks! Yeah you could have a point with overwatering actually. I changed the watering pattern to daily a while ago after I forgot to water them for a bit too long. The leaves were drooping so much I thought some plants might have died.. But since I changed it, I never saw any droop anymore but instead now this curling and such.. Since they got a bit large and I rearranged them to 2 plants per tray, I have not been watering each tray every day anymore and perhaps they are already recovering a bit which is why I'm seeing some healthy leaves as well. I guess the daily watering was overcompensating.. I don't have a hygrometer to check the humidity, but I'll give it a try to spray some water. What surprises me is that the moz piri piri has tons of flowers that don't drop. Maybe just differences between the cultivars?

      @@RebelCoderX The Moz Piri Piri is more hardy and used to a drier environment. Different species have different needs depending on their origins

    I'm a new fermenter. i have a small garden (5 pepper plants). My peppers are coming off at different times, how long can I leave them on the counter before I need to start my brine fermentation? Also, can I add peppers as I go, days even weeks later after I start my fermentation?

    This is my 1st time to grow chillies from seed. They are doing good, and ive just re-potted them into bigger pots, i now have 17 individual plants 😊. I keep them on the windowsills in the kitchen, and put them out during the day when its warm. Theyre about 6ins high, when will they start flowering? Cheers from Ireland. 🌶

    Anything with Abamectin will wipe them out. If you don't want to go down the pestercide route then aphelinus abdominalis will take care of them too. Good luck. PS: the curling you're seeing is due to the aphids but, curling can also be a Calcium deficiency or even a sub optimal environment. I'm seeing some lower yellowing and interveinal chlorosis which suggests that maybe you're not feeding enough. When removing the leaves, you also have to remember a plant can translocate ions. Personally I wouldn't remove the larger leaves unless they're dead.

    I'm relatively new to the world of very hot peppers but I can't say that I understand why Ed is [polarising nor do I understand why he owes anyone to give away his invension. It's not like Coca Cola is giving away their recipe so that everyone can make it in their home. For instance, I invented a hot sauce recipe several people have already told me is the best they ever tasted. yes, I can make a video and give the recipe away for free or I can manufacture it, keep it a secret, and potentially make a lot of money. I certainly don't owe anyone anything. It is my call.

    Hi Shaun, love all your vids so helpful and informative. I have just started my first vac seal bag ferment and was watching to see what liquids you use to thin the blended product when too thick. Is fruit juice an option? You use white wine vinegar in one video |I've seen but didn't see the brand etc (I'm UK also) and was hoping which Italian brand you use please. Thanks for all the great stuff you make and the help you give.

      Hey there. Thank you for watching! Yes, fruit juice is an option for sure. You will however need to heat pasteurise it after. The vinegar I used I import for my business. But take a look around, there are some great Italians and Spanish white wine vinegars. Essentially wherever you can get great wine...you can get some fantastic white wine vinegar

    Growing in the ground I firstdug a trench 3 to 4 feet deep and mixed the natural dirt with sheep manure compost and fish guts bones and heads. I also added quite a bit of rinsed play sand. The powder ssnd is like adding concrete mix so that's why I rinse the sand first. Put in 5 gallon bucket and fill with water then dump water out carrying with it the powder. Remaining sand gets put in a wheel barrel. It helps prevent clumping and helps with water to pass through. Why 3 to 4 feet deep? Peppers start growing up when the root system slows down and has issues going down and spreading which no one ever talks about!

      @@ChilliChump Nice, thanks for the link! Not as tall but that's because the 6 plants in a 20 foot single row go almost 6 foot tall and then spread around 3 1/2 feet - I seriously think that once they touched eachother they stopped growing wider (crawling wider on each branch) once hitting the fence grid. 4 rebar poles around each plant 8 ft long but sank 3 ft down. I only see a little compaction from year to year of the compost/soil, but yeah, I still top it off and replace the plants that don't make it when pruned and over wintered. ( I live in South Dakota btw )

      Its not someone elses thumbnail...it is someone elses photo however (from a stock photography site I pay for). And yes, it was a better photo than I had taken.

    Consider getting a few small beakers for measurements, tall form are ideal for pH measurements. 50 and 100 ml are ideal

    I use this mix after watching your previous videos and have started using the Mycorrhizal fungi for the first time this year. My plants are deep green in colour and doing very well indeed. Bearing in mind I'm in Lancashire and the weather this year I'm very very happy with progress so far. I have used a couple of sprays of epsom salts on the leaves as well. I discovered a couple of years ago that following your grow chillis videos was the way forward. My only problem this year will be what to do with my excess chiilis from last year in the freezer once this years crop arrives. I still have sauces and jam from then as wel despite giving plenty away 👍

    Out of interest, as it looked nice, was the compost a store bought compost? If so, what brand? I've had some shockingly bad branded composts now peat is being reduced / removed (for understandable reasons)
